Honey,Basil & White Balsamic Vinaigrette


So I came up with this dressing yesterday because I needed something that would go with a spinach salad with shrimp. It is very simple and light. I was originally going to do something with cilantro but the store was actually out of it. Fortunately, I have an herb garden of fresh basil in my kitchen so I came up with this instead. So here is the recipe and I hope you enjoy.

Honey, Basil & White Balsamic Vinaigrette

1/4 cp white balsamic vinegar
3/4 cp extra virgin olive oil
1 large handful of fresh basil
1/2 fresh squeezed lemon
3 Tbsp honey
pinch salt
1 tsp mustard(to hold the emulsion)


Method:
Add all ingredients except olive oil in blender and blend for 30 seconds on low

Slowly pour in the olive oil with the blender still running until all the oil is added and the dressing is emulsified.
